Nadan Chemeen Varuthathu / Kerala Prawn Fry



Prawn fry is one of the favorite appetizer dish in Kerala. Fresh prawns marinated with spices and fried in coconut oil. Yumm! My hubby went with his friend to get fresh catch from a nearby town. This prawn fry is prepared in Kerala Style. It is perfect as an apetizer or as a side dish with rice. This is done with basic marination.




INGREDIENTS
Prawns - 200 g cleaned and deveined (weight after cleaning)
Kashmiri Chilly Powder - 11/2 tbsp
Turmeric Powder - 1/4 tsp
Pepper Powder - 1/2 tsp
Cornflour - 1 tsp
Salt - 1 tsp or to taste
Lime - 1/2
Water - 3 tbsp
Coconut Oil - 4 tbsp
Curry Leaves - 2 sprigs




Method
In a plate mix all the dry ingredients - red chilly powder, turmeric, pepper, cornflour, salt.
Squeeze the lime juice into this.
Add water and make a paste.
Marinate the cleaned prawns with this masala.
Keep aside for 15 minutes.
Heat the coconut oil in a wide pan to shallow fry prawns.
Add in few curry leaves (1 sprig).
When oil is hot slowly place the prawns in it.
Cook on medium high flame for just 2 minutes and flip the prawns.
Fry for another 2 minutes. Do not over cook the prawns as it will become rubbery.
Remove the prawns on to a plate lined with kitchen roll.
Transfer it to a plate and garnish with few curry leaves.
Serve hot as an appetizer.


Tips:
Cornflour is added as a binding agent. 
Add water as required to make a thick paste.
Adjust spice level as per taste.
